SSF Clam Bake

SSF Clam Bake

The easiest way to enjoy a clam bake! All you need is a sheet pan and an oven.

Ingredients

  • glug olive oil
  • 2 ears of jersey corn, husked and cut into thirds 
  • 1 pound fingerling potatoes, cut in half
  • 25 little neck clams, scrubbed clean
  • 1 pound SSF shrimp, 21-26count, shells left on
  • 12 ounces kielbasa sausage, cut into 1/4inch medallions 
  • 1 cup salted butter (2 sticks)
  • 6 cloves minced garlic 
  • 2 tbsp Spicy Hank Rub Seasoning (or Old Bay) 
  • salt and black pepper to taste 
  • parsley, lemon wedges, and extra Spicy Hank Rub Seasoning for serving 

Instructions

  1. Preheat oven to 425 degrees and coat baking sheet with olive oil.
  2. Cook the corn and potatoes on the prepared baking sheet in preheated oven for 15-20 minutes until just about tender.
  3. While potatoes and corn are cooking, melt half the butter (1 stick) in sauce pan (or microwave). Stir in Garlic and Spicy Hank Rub Seasoning. 
  4. Once almost tender, remove potatoes and corn from oven. 
  5. Add clams, sausage, corn and potatoes to a large bowl. Pour melted butter mixture over seafood and veggies and stir to combine (evenly coat everything in butter). Salt and Pepper to taste. 
  6. Spread everything out on your baking sheet. Cook for about 10 minutes or until some of the clams begin to open. As soon as the first clam opens, add the shrimp to the the baking sheet (**adding the shrimp mid cook time prevents them from overcooking!)
  7. Cook until all clams have opened (roughly 10 additional minutes). *Note there may be 1-2 stubborn clams that won't open, don't wait for them!
  8. Melt remaining butter over medium-high heat until browned (because brown butter is the best butter). Stir to prevent burning. 
  9. Add lemon wedges and parsley to the baking sheet and serve! 
  10. Don't forget crispy bread to soak up all of the delicious juice. ENJOY!
