Shrimp Scampi

Ingredients

  • 2lbs large or extra-large shrimp -- shells ON (roughly 1/2lb per person)
  • 1/2 cup Shrimp Stock (see below how to make -- SO easy!)
  • 3 tbsps Butter
  • Glug of Extra Virgin Olive Oil
  • 4 Garlic Cloves, minced
  • 1/2 cup Dry White Wine (Pinot Grigio, Sauvignon Blanc, etc. Something you would drink a glass of while cooking)
  • Fresh Juice from 1/2 Lemon
  • Kosher Salt -- to taste
  • Crushed Red Pepper Flakes -- to taste
  • Ground Black Pepper -- to taste
  • 1/3 cup Chopped Parsley
  • 3/4 lb pasta (linguine) or crusty bread

Instructions

Step 1:
  1. Fill a large pot with water (enough to cover all shrimp). 
  2. Bring pot of water to rolling boil and drop shrimp in.
  3. Set a timer for 4 minutes. 
  4. Once done cooking, make sure to reserve about a cup of  "shrimp stock" for the scampi. The shells are the secret to the best flavor! 
  5. Drain the shrimp in a colander 
  6. At this point you can run cold water over the shrimp you're saving for the week to cool and begin peeling the shrimp for the scampi. (Make sure to compost the shells!)
Step 2:
  1. In a large sauté pan, melt butter with olive oil. Add garlic and sauté until fragrant, about 1 minute. Add wine and enjoy the sizzle!
  2. Add salt, red pepper flakes and black pepper to taste and bring to a simmer. Let wine reduce by half, about 2 minutes. Add half a cup of the reserved "shrimp stock", continue to simmer.
  3. Cook your pasta and reserve 1/2 cup pasta water (secret to thicken the sauce!)
  4. Add peeled shrimp to the sauce with the 1/2 cup pasta water.
  5. Stir in the parsley and lemon juice.
  6. Mix pasta, sauce and shrimp together in the large pot used to boil the shrimp.
  7. Voila! Serve and Enjoy! (We love good quality parmesan cheese on top!)

Notes:

Please note we always batch cook our shrimp (5lbs total) so that we have left over shrimp for meals during the week (salads, snacks, etc.) During the first step, we boil all the shrimp at the same time.
