Parmesan Encrusted Flounder

This is one of our favorite weeknight meals when we have fresh fluke -- so easy and so quick! Pair with green beans or broccoli for a healthy dinner.

Ingredients

  • 4 flounder fillets (2 pounds total)
  • Salt and freshly ground pepper
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup panko bread crumbs
  • 4 tablespoons butter (melted)
  • 2 tablespoons extra-virgin olive oil
  • zest from half a lemon
  • chopped parsley for garnish

Instructions

  1. Preheat the oven to 425°. In a large baking dish, season the fish fillets with salt and pepper, drizzle a small amount of olive oil and lightly coat both sides of the fish. Mix the parmesan, bread crumbs, lemon zest, melted butter and 2tbsp olive oil in a small bowl. Spread over the fillets. Bake for 10-12 minutes until the fish starts to flake (depends on thickness of fish). Turn on the broiler and broil the crust top until brown (watch closely so it doesn't burn). About 1-2 mins. Sprinkle with parsley and serve. Yum!

Notes

We use Locatelli brand Pecorino Romano Grated cheese from our local grocery store and Aleias Gluten Free Panko Crumbs (the best panko bread crumbs we found).
